{"id":260,"date":"2009-01-07T18:36:27","date_gmt":"2009-01-07T23:36:27","guid":{"rendered":"http:\/\/gandgmag.wpengine.com\/articles\/uncategorized\/feelin-gravy\/"},"modified":"2018-09-06T13:14:23","modified_gmt":"2018-09-06T17:14:23","slug":"sausage-gravy","status":"publish","type":"recipe","link":"https:\/\/gardenandgun.com\/recipe\/sausage-gravy\/","title":{"rendered":"Feelin&#8217; Gravy: How to Make the Perfect Sausage Gravy"},"content":{"rendered":"<p>If you ever want to eat like a lumberjack without doing a lick of work, you might stop by the <a href=\"https:\/\/www.marriott.com\/hotels\/travel\/dalml-le-meridien-dallas-the-stoneleigh\/\" target=\"_blank\" rel=\"noopener\">Stoneleigh Hotel &amp; Spa<\/a> in Dallas and let Chef David Bull fix you a plate of savory biscuits smothered in sausage gravy.<\/p>\n<p>Although food lore traces this countrified dish back to Appalachian logging camps\u2014the reason for the term <em>sawmill gravy<\/em>\u2014Bull has embraced it as part of his culinary signature. \u201cI\u2019ve put biscuits and sausage gravy on the menu at every Texas hotel restaurant where I\u2019ve worked,\u201d he says. \u201cIt\u2019s warm and comforting, but also unexpected.\u201d<\/p>\n<p>Biscuits and sausage gravy will forever be regarded as a classic Southern workingman\u2019s breakfast: hearty and inexpensive, with a tiny bit of meat able to feed a mess of laborers. In some parts of the South, the dish is still referred to as \u201cpoor-do,\u201d which speaks to its economy, or \u201clife everlasting,\u201d testimony to its staying power.<\/p>\n<div class=\"wp-caption\">\n<p><img decoding=\"async\" src=\"http:\/\/gardenandgun.com\/wp-content\/uploads\/2009\/01\/GG0109_Anatomy-of-a-Classic_02-1.jpg\" \/><\/p>\n<p class=\"image-credit\">Johnny Autry<\/p>\n<\/div>\n<p>Traditionalists will find it easy to spot Chef Bull\u2019s refinements. Although \u201ccat head\u201d biscuits are typically pinched from the dough and dropped on the baking sheet by hand, the chef cuts his elegant version from rolled dough. Brushing the top of each biscuit with heavy cream before baking does more than bestow a glossy sheen. It creates a light crust that can hold its own against the gravy (without getting soggy) and keeps the interior layers tender and moist: \u201cLike searing a piece of meat,\u201d says the chef. Heavy cream also enriches the white gravy, while aromatic fresh sage leaves bring out the best in the fresh pork breakfast sausage, another staple of the Southern kitchen.<\/p>\n<p>\u201cWe get a lot of international tourists at the hotel, and biscuits with sausage gravy represents a little bit of American culture for them,\u201d Bull says. \u201cThey may not know the history.
