Twitty credits the inspiration for this \u201cessential Virginia breakfast dish\u201d to the late Edna Lewis, aka \u201cthe grande dame of Southern cooking.\u201d<\/p>\n\n\n\n<p>To amp up the complexity, use a mixture of apple varieties, and try dusting them with kitchen pepper, a Colonial and antebellum-era spice mixture that \u201cadds an extra layer of flavor and fragrance\u201d and \u201cspeaks to the transfer of the tastes of Medieval Europe and West Africa into Southern cooking,\u201d Twitty writes.
